Cashew Milk

5 Minute Cashew Milk from CB2 FitnessWhen we first switched to paleo 8 years ago, I did it all wrong.

I tried to eat everything I did before – just swapped out grains for “paleo” ingredients.  Charles saw right through this and was quick to point out it defeated the purpose.  But I was sure I could keep enjoying all my sweets and baked goods, just in “paleo” form.

I quickly learned better, but back to the point of my store.

To be able to do this I used coconut in everything… oil, flour, manna… in EVERYTHING!  And unfortunately in the process of learning my lesson, I overdid it.  Now everything that even has just a bit of coconut oil or flour in it tastes completely overpowered by coconut.

Now I don’t rely on “paleo-ized” items, but I still do love certain things – like milk in my coffee or smoothie 🙂

And that’s the great thing about cashew milk!

Originally I tried store-bought, but wasn’t the biggest fan.  But homemade, I really like the taste.  And as a bonus, it is really easy make, like just push a button on your blender easy. It’s also great that I don’t have to strain out anything like you do with almond milk, which seems wasteful.  Just dump everything in the blender and let it do its thing.  Saying this is even a recipe is a little bit of a bold statement – but all the less, here it is!

Ingredients

  • 1 cup raw cashews (if you don't have a high-powered blender, can just soak overnight in water. Rinse them well before blending)
  • 2 cups water

Instructions

  1. Combine cashews and water in blender - blend for 60 seconds.
  2. Enjoy, no need to strain or do anything more!

Have you used this before?? I use it in coffee, gelatin puddings etc. but do you have any great ideas for how to use cashew milk?
